i know you can do it with brake rotors, but what about rims? i would think so, but i just wanted to check. i've got some rims that are 4 lug (one set of holes) but the pattern is not 4x100 or 4x114.3. could i get another set drilled for 114.3 and be safe?

I would think it is fine if there is enough metal to work w/. I would take it somewhere to be done though like a machine shop.

try baker blacky machine shop.
they are on the north side. show them one rim and they will tell u if it is safe.
they can redrill them and put steel inserts on them. alot of rim shops goto this place.
